Byron Bay Holiday Guide Archives :. The "Road to the Soul" Goes Through the Stomach

by Franco & Lella Gimelli

Fruit

Going to a restaurant that keeps the culinary culture of its own country of origin is like starting a journey in the same country.

Whoever wants to alter those things that are the characteristic of each dish means first of all that they don't want to understand the ABCs of that country that they are visiting.

Our local eating houses try as far as possible to keep the recipes that are tied to the tradition. For instance at our place when we bring to the table those plates that bring the substantial taste of Italy, these dishes bring you the flavour of our history. Not for nostalgia reasons, but only for genuineness.

When we eat something that brings back memories of soups, pasta, or main dishes of Italy, like those ones that we were accustomed to taste during our youth, it nearly brings tears to the eyes by the emotion of revisiting those flavours.
